Summer Salsa


With summer here, most of us are spending more time with friends and family. Whenever we get invited somewhere for dinner, I love to bring an easy appetizer and salsa is normally my go-to. It’s great because I can use paleo cassava flour chips and others can use tortilla chips. I also love having leftovers to serve over eggs in the mornings.


ingredients

4 hot peppers, seeds removed


papaloquelite


2 tomatoes, diced


1 sweet green cowhorn, seeds removed and diced


1 small bell pepper, seeds removed and diced


1 tsp of cumin


4 garlic cloves


lime juice from 1 lime


salt and pepper to taste



Method

Dice or chop all of the ingredients and add to a food processor. Once everything is in the food processor, set it on low for a few minutes. I prefer my salsa finely chopped, but if you prefer a more chunky salsa, pulse to the wanted consistency. Serve with chips, tortillas or over eggs!
